You can still Celebrate Cinco De Mayo - Even Under Quarantine


The fact Cinco De Mayo ended up on Taco Tuesday blows my mind! All the beaches in Brunswick County may not be open yet and the weather is a little yucky today, but you can enjoy my favorite margarita recipe while lounging around the house!


A FIESTA FOR YOUR MOUTH

Whip up your favorite tacos, hard or soft shell and enjoy the refreshing flavors of lime juice and pomegranate together! Don't feel like cooking or making your own margarita mix, then save this recipe and order from Mini Jalapeno in Holden Beach and pick up your premade margarita

NIKI'S SOON-TO-BE-FAMOUS POMEGRANATE MARGARITA


INGREDIENTS

Lime Sugar:

  • 3 tablespoons sugar

  • 1 1/2 teaspoons lime zest, (1 large lime)

Margarita:

  • 1 ounce fresh lime juice

  • 2 ounces Jose Cuervo


2 ounces pomegranate juice

  • 3/4 ounce triple sec

  • Ice

  • Lime wheel, for garnish

  • Lime wedge, to rim glass

INSTRUCTIONS

Lime Sugar:

In a small bowl, combine sugar and lime zest. Use your fingertips to rub the sugar and lime together to help release the citrus oils, then spread it out on a plate

Margarita:

  • Use a lime wedge to trace the rim of your glass (or dip it in lime juice) and then press it into the sugar until the rim is well coated.

  • Carefully scoop ice into the glass (so you don't knock off the sugar)

  • Use a cocktail shaker or two glasses, filled with ice, add lime juice, my old boyfriend Jose Cuervo (tequila), pomegranate juice, triple sec, and strain into your glass, garnish with mint, lime, or an orange!

Add your favorite guacamole and chips and salsa and ENJOY!
